Today ended the Diabetes unit in Baking for Dietary Restrictions. I made these yesterday with dried cranberries, walnuts, and sesame seeds; the consensus was that it needed more flavor/something actually sweet, so if I make them again I might put in some honey. How much I have no idea, but almost certainly less than half a cup. Today I made these with granulated Splenda subbed in for the sugar and half a cup of walnuts added. (Also gluten free!) I made them with my dad in mind, because he loves nuts in his desserts. They turned out really well, and surprisingly moist and crumbly for how dry they looked, though if I make them again (seems likely for my dad) I would want to flatten them more; I used a #40 scoop to portion them out (ending up with ~14 cookies), and they didn't really spread out in the oven.

Next week we start Gluten Free, to be followed by Lactose Intolerant (IIRC), and then Low Fat/Allergen Restrictions. I'll need three recipes for each of these groups, with a preference for desserts. While I have a recipe for gluten free peanut butter cookies, and the above chocolate chip cookie recipe, I'd rather like something a little bit more complicated than the former, as well as something I haven't actually made for class. Something that can me made in under two hours is ideal* (rassa-frassa "teaching" method), though not vital.

I also need to come up with a recipe for some sort of bar-type treat to be sold at the cafe. If the snack bars above had gone over better I would have used those, but it looks like I'll be doing some more digging. Any and all suggestions for both this and the above are more than welcome!

(I totally need to make a baking/food icon.)

* Seriously, everyone who possibly can has started coming into class early and beginning their daily baking projects at practically the first opportunity. I have no idea if/how the teacher is not getting the idea here, but it seriously doesn't seem to be the case that she is.

Edit: Peanut Butter Cookie Bars. BAM. 90% sure this is what I'll be going with for the cafe, just with white chocolate chips instead of M&Ms. White chocolate and peanut butter is a combo that cannot be beaten, as far as my mouth is concerned.
