Dad. Dad, I love you. But I just told you that I don't eat a lot of salads/plain greens, which is why the giant packages of greens you bring home occasionally tend to languish in the fridge until they get all gross rather than being eaten. What part of that made you think that bringing home five ginormous packages of spinach, on top of the two large bags of assorted Farmer's Market greens and the last bag of spinach I still haven't gotten through, was a good idea?

It's not a bargain if it goes bad before we use it. Even if it's free.



*sigh* Anyone have any good recipes that call for a buttload of spinach?

Edit: I ended up using a recipe from The Starving Students' Vegetarian Cookbook called "Popeye's Platter", which was quite good. Mom and Dad also liked it, though Dad couldn't have much because it relied heavily on rice. I'll probably be making a double batch tomorrow.

Now I need to start looking for recipes for "spring greens", because apparently I miscounted or something and two of the packages I'd assumed were all spinach are not. Maybe I can just sub some in for spinach in some of these recipes. Or it'd be a great excuse to dig out that quiche Lorraine(?) recipe again. Hmm...

The veggie lasagna I'm making tonight, though it wants store-bought frozen spinach and I don't know how well it would work with fresh. the marinara that goes in it and the lasagna itself. Do you need me to type either recipe up for you?

I like to make macaroni, and then add a thing of ricotta cheese and a buttload of chopped sauteed spinach and garlic. :)

I'm jealous, cos I like spinach!

Recipes that involve cooking the spinach always take a buttload of spinach, because it shrinks so much in the cooking process.

Here are two curry recipes that I happened to have saved in my dreamwidth memories: cauliflower and spinach curry by [personal profile] kindkit and chickpeas and spinach by [personal profile] commodorified.

[personal profile] commodorified's calls for frozen spinach, but of course fresh is even nicer and you can use a larger volume because I think spinach compresses itself when frozen.

I haven't made either of these recipes exactly (and would probably use curry sauce from a jar because I don't have lots of spices on hand) but this gives you an idea.

It's a shame your dad can't have rice. One of my favorite easy spinach meals is a rice and spinach thing that I make when there's nothing else in the house. I tend to eat it raw, though, I don't like the texture when cooked.
