I've seen a lot of actors in shows just move stitches from one needle to the other without actually knitting -- assuming they do more than waggle their needles. It veers between hilarious and annoying.
If you ever do a Viking or Nordic story, you could definitely try including naalbinding, which is a fiber art I really wish I could learn. The resulting fabric it makes is somewhere between knitting and crochet in density vs stretch, and it existed before knitting in the Scandinavian region.
