Dear My Parents,

Sometimes when I am making a meal that is more complicated than a sandwich, I want to make it for just me. Especially when I have only bought ingredients with a meal for a single person in mind. Like, I'm usually happy to make something else instead! Just. I'd like to know before I start making a meal for Just Me that it's instead going to be for three people. Possibly so I can start making something else instead.

(I would be willing to accept "Not feeling guilty when saying that I'm only making enough for one" as a compromise.)

Yours,
Someone who really wanted to eat what was initially planned as one hungry person's worth of gyudon last night.

- Vote!
- Go in to work on what would have been a day off to make... basically flattened sesame balls but with pumpkin mixed in the outer shell? For Passport this month
- Pick up some stir-fry ingredients at Aldi
- Buy two "ugly" sweaters at Goodwill, one of which is at least tasteful and artistic even if it's not something I'd particularly like to wear most of the time, and the other of which features Santa riding on a unicorn made of iridescent sequins
- Refill the gas tank
- Make and eat the aforementioned stir-fry
- Play a video game

The flattened sesame balls are delicious. It's basically equal parts pumpkin puree and rice flour mixed together with a dash of salt, measure out into balls, flatten them out, put a disc of about 1/2* the amount of red bean paste between two of them (with a pumpkin/rice flour "outline") and seal the shell around it, dip in or sprinkle with sesame seeds, fry briefly. I left work really wanting mochi and/or sushi, but went with stir-fry instead. Satisfied my sesame craving!

* Okay, this is hard to describe. The total shell-to-filling ratio was 4 shell to 1 filling, so the filling disc was about half the size of one shell disc. I hope that makes sense! Anyway, delicious, do want to make at home. Or at least just track down some red bean paste and make something with it. Nom!

Applesauce would be really delicious if it weren't for the damned texture.

At least the applesauce-oatmeal cookies are pretty good. Well, once I add in some caramel nibs, at any rate 😅 Operation: Get More Fiber in Socchan's Food has a promising new* recipe in the toolkit!

Tonight I made sugar cookie bars for the neighbors who usually snow-blow our driveway and sidewalk for us! I missed the previous snow, and we had a bit of one yesterday/Thursday, both of which they helped out with, so it was time. I did have to go to the store to get more sugar, but the treats are still cheaper than a snow blower.

I made two batches total: One I added 1/2 cup white chocolate chips and 1/2 cup craisins, and to the other I swapped out 1/2 cup of flour for cocoa powder and added 1 cup of Andes Mint peppermint bark chunk things. I think it was a bit too much cocoa powder, because the chocolate mint bars turned out super rich; I'd probably back it off to 1/3 cup or 1/4 cup if I try that variation again.

Anyway, neighbors are getting 18 bars of each type, and my parents and I got the remaining six of each, so two per flavor per person! A good baking endeavor all around, IMO; I'll have to make them again.

Edit: And it's snowing again, so I guess this is extra convenient timing!

I almost passed out at work today! 🙃 I strongly suspect it was low blood sugar, dehydration, and/or heat (we had all the ovens on and it got to about 66F today), at least two of which I have firm plans to fix tomorrow (and the third I can do relatively little about).

In what I'm currently blaming on my highly-irregular-for-capitalism sleep schedule, I wasn't very hungry at lunch time, and mostly just wanted an excuse to sit down for half an hour; I ate maybe a third of the plate of food I was provided (house made fried rice with chicken) and threw the rest out. It could also be that, in the almost eight months since I was last working at the hotel, I lost some of my ability to eat random foodstuffs I usually avoid. I mean, I am physically able to eat those things? But if it wasn't lack of appetite, then it was some sort of weird, executive dysfunction-like block. More data is needed.

As for what I did today, I made four batches of our most recent dinner roll dough—or maybe our previous dinner roll dough? It sounds like we hadn't made it in a while. Anyway, our recipe makes something like six gallons at a time, which we have to divide between three five gallon buckets, because overnight the yeast will make it grow to fill that space. So we're going to have something like sixty gallons of bread dough tomorrow, which we'll need to shape into dinner rolls for people to buy and take home or something. Work is work, I guess!

I also made two batches of our biscuits, and wow, our recipe is delicious. It's like...

Let's see if I can recreate this recipe from memory )

They ended up getting a little pyramid-y on me, but whatever, they'll still be delicious. If you try making them yourself, be warned that they're a little crumbly; better for biscuits and gravy than for breakfast sandwiches. They apparently mix really well in an actual mixer, though I pretty much always mix them by hand.

Anyway, I have definitely earned a good rest tonight. Time for shower and then sleep.

Sweet mercy, a break is exactly what I needed. When I woke up, uh, yesterday, I only had the energy to read posts and take tabs of things I might want to get to later; I didn't even have the energy to add tags to simple, one-paragraph text posts. I might have the energy now, but I'm also going to try and save it for later.

First part of the food order is done: 3 doz peanut butter banana cookies. I tweaked my old, familiar gluten-free peanut butter cookie recipe, and after a failed experiment a couple of days ago, am quite pleased with the results. Here's the recipe I ended up with:

1 cup peanut butter
1 banana, mashed
1/2 cup sugar
1/2 cup buckwheat flour

Mix all the ingredients together
Scoop with a spoon into roughly 1 Tbs sized balls
Flatten dough balls with a fork
Bake at 375ºF for 8-10 minutes

Now gluten-free and vegan!

Anyway, currently taking a quick break from the kitchen to do more plain relaxing. Up next: three dozen chocolate cake cookies, followed by probably another break, then four dozen chocolate strawberries.
