Applesauce would be really delicious if it weren't for the damned texture.
At least the applesauce-oatmeal cookies are pretty good. Well, once I add in some caramel nibs, at any rate 😅 Operation: Get More Fiber in Socchan's Food has a promising new* recipe in the toolkit!

Date: 2023-07-09 04:51 am (UTC)2 cups quick oats
1 cup applesauce
1/4 cup caramel nibs
1/4 tsp cinnamon
1/4 tsp salt
Preheat oven to 350°F
Mix the dry ingredients together; add in the applesauce and mix thoroughly
Scoop with #30 size and flatten slightly; place on lined or greased baking tray (because oatmeal sticks like eggs)
Bake ~15 minutes or until done
Yield: Approximately 15 cookies
(Option for bars: Press the dough into the bottom of a parchment-lined bread pan and bake for 22 minutes. Cut into 6 pieces when cooled. I would have kept doing this option, but it turns out that the bars go moldy faster than I'd like 😥)

Date: 2023-07-09 05:35 am (UTC)My family uses applesauce as an egg substitute in baked goods requiring 1-2 eggs. (They get them in packs of 4-ounce containers; 1 container = 2 eggs.) Don't know if egg substitution is a positive, negative, or neutral for you, but figured it might be useful to know this is an option.
