Still tested negative this morning, so I went in to work! Which, on the one hand, was pretty great, because I had the whole bakery to myself and could listen to audiobooks practically non-stop.

On the other hand, it was also less than ideal, because there was no one there to stop me when I looked at the to-do list for today and tomorrow (also a solo day for me in the bakery) and went, "Hmm. I hate doing double batches of naan, and I also hate doing double batches of hoagies. What if I just did a regular size batch of each on each day? Surely it won't take that much longer, and the lack of headache will be more than worth it!"

Well, I did succeed at not having a headache, but as to the timing, uh. That was less successful. I ended up staying a little late to get my second bread out of the oven, then ended up staying a little later to measure out the dry ingredients for all of tomorrow's breads, because I may have learned my lesson, but I do also need to finish all of the bread that's due, which means I have to stick with the course of action I've already started. Hopefully having everything pre-measured will help a bit tomorrow. I think my ideal timing is going to be dinner rolls, then naan, then hoagies, but I will have to think about it a little longer. If only the hoagies didn't have a mandatory 1.5 hour resting period built in between first and second mixing...

We're getting new employees in the bakery! Which is great, because the most recent new employee has been with us for over a semester and is just... generally not working out. Some of it is her ADHD (which she is only recently able to get medicated), some of it is personality clash with our Pastry Chef, and some of it is probably just her. We haven't had student interns since Covid, and I feel like over the same amount of time as one of the interns, she's definitely not adapted as well as some of them. I'm pretty sure she would have done better if she'd have gone through the actual bakery program in the school, especially with at least a handful of peers she could lean on and learn from, instead of coming into the bakery green as a possible new Lead Cook (second in charge under the Pastry Chef) and surrendering responsibility from there.

I also lost a lot of respect for her about two weeks ago, when I gave her a strong hint about needing to finish up her current task so she could tag in on one I needed her help with, followed by her continuing to take her time and chat amiably with students during her then-current task. She later admitted to catching and ignoring the hint, rather than (as I had initially assumed) missing the hint entirely. So. Definitely still a bit of lingering bad feeling there, not gonna lie.

Anyway, she'll be leaving us, hopefully for greener pastures on her end, in early June, so it's very good that we're getting two other employees. One of whom has already started and seems quite promising! I'm looking forward to meeting the second one soon 😃

The past week especially has re-solidified for me that no, I really don't want to work much more than twenty hours a week. Or, at least, not in a job as labor-intensive as baking, and not with a half-hour commute each way.

I might still be able to swing up to twenty-five hours, provided I can have shorter work days, but with gas prices being as they are, well. I suppose I'll stick with three long-ish days a week for now.

(I worked an extra day the past two weeks, and on top of that, Thursday was something of a nightmare. I spent most of Friday asleep and a lot of today generally resting and recovering. Tomorrow it's back to work (and earlier than usual), but at least it'll be a normal length week!)

In other news, we just got all new chef coats at work. While I'm reasonably jazzed about the zipper and the snaps that help keep sleeves rolled up, the switch from cotton to a poly-cotton blend (emphasis on poly) with air vents is Not Ideal, and I am entirely dismayed by the lack of front breast pocket. I used that to listen to my phone, darnit! I don't always want to be taking over the bluetooth speaker, and it's not like I can legally wear headphones, even if I was willing to risk missing crucial work interactions that way!

It put me out of sorts for several hours today, I'm not afraid to say. It also put me in mind of finding a way to wrangle my own aprons that I could include some sort of "top pocket" on. Surely there must be a way. And it'd definitely be cheaper for me than buying my own chef coats and bringing them from home, though that is certainly another option. Gotta buy new clogs first, though; my current pair has practically worn through the bottom layer of the soles.

A fun discovery at work last week: Apparently, the Tom Sawyer gluten-free flour blend that we've been ordering to make our gluten-free, vegan streusel topping? Has gelatin in it. Making our "gluten-free, vegan" streusel only one of those things.

(Well, technically not even one; we make all of our goods on the same site, and that includes glutenous breads. If there's a single tool in our kitchen that hasn't touched wheat, it probably hasn't been there for more than a week. But we can damn well make things as gluten-minimal as humanly possible in that situation, while being sure to warn any of our guests/customers of exactly what's going on.)

Anyway, I'm reasonably sure we'll be replacing that flour blend with something that's actually both gluten-free and vegan, and I only hope we didn't find out too late.

Between work and accidentally viral Tumblr posts, I've been pretty wiped out the past few days 😅 I still want to update today, though!

Let's see, what can I talk about...

Oh! A big event that was originally scheduled for this weekend was moved to, like, April/May. I'm pretty jazzed about this, because Saturday is a big Pokémon Go event, and I otherwise probably would've been working through it. (I'll finally be able to catch Corsola!)

My IUD follow-up appointment is on Friday morning, as well. I suspect the IUD will be coming back out, as I've been basically bleeding continually since it was put in 😩 It's also still kinda sore/uncomfortable in that region, and I sincerely hope that's not related to the fall I took a week or so after it was put in. Anyway, I may ask to go on my previous pill instead of something new, since I was actually doing pretty well on it, and only had any major complaints about that one extra long period where I'm pretty sure I missed a pill anyway. Taking a pill at roughly the same time every single day was a pain, but it's less of a pain than bleeding every single day, and getting my whole uterus removed in Plague Times also seems like not a great idea. Maybe in 2025 or so things will have gotten better enough for me to reconsider that.

It's been cold enough outside the past few days that I finally gave in and dug out the down comforter. There's been an instant improvement, though that could also be due to the fact that I investigated the one window in my room, and yep, it's come loose from the tape and has started cracking open again. Closed that up for the time being as well, and I may see about applying paint (or at least more tape) tomorrow or Tuesday. ...More likely Tuesday, since I work tomorrow.

Today was a bit exciting, since I went from sleeping very poorly, to getting up early to remove the 5+ inches (12.5+cm) of snow off of my car, to a super quick stop at the grocery store before work, to driving over still messy roads to work, to a surprisingly short work day, to doing errands after (running to a different grocery store followed by picking up meds), and ending with me making dinner for the family (just frozen fish and fries, with steam-in-the-bag broccoli, but it's still a nice, hot meal).

I may have packed a bit too much into it for the bad sleep of last night, but I'm fairly certain that if I hadn't gotten to the pharmacy today, I wouldn't be able to get there until Tuesday. In addition to that, the two grocery store stops were primarily for "work snacks": My job does serve shift meals to employees, but they either start exactly when I'm supposed to arrive at work (and I'd feel like a jerk if I clocked in, only to clock right back out for a lunch break), or five-and-a-half to six-and-a-half hours after I clock in. I start getting peckish about four hours after I've eaten (which is usually about three hours after I've clocked in), and around five hours after I've eaten, I start getting actively Hangry and/or otherwise have low blood sugar issues (one of my reasons for suspecting I have some sort of circulation bullshit), but by then it's still at least an hour-and-a-half until the next meal time, and we aren't usually allowed to eat much of our own product, so: Snacks it is. And bringing in my own snacks is cheaper than going to the vending machine, which means battling executive dysfunction to get to the grocery store and remembering to bring the snacks with me to work. Had I known that I'd be having a short day today, though, I definitely would've skipped the pre-work grocery store trip.

On the plus side, I'm now covered for the next few weeks at least, even if I don't remember to bring everything I bought in the afternoon in tomorrow. Even the cheese should be fine in the car in this weather!

We have this giant banquet at work on Friday and we have to make. So many pies. So many. It's better than Staycation, but I wasn't expecting to hate pies so much, especially since I didn't really hate cookies after all the Staycations and cookie jars I've been through so far. Is it because I like cookies more than pies? Hmm.

The hotel is doing a significant amount of pre-ordered Thanksgiving meals again this year, and I'll be "in charge" of shaping dinner rolls again. Aside from the availability of working Covid vaccines and the derecho being long past, there are two major improvements over last year:

1) We're only making 1,000 rolls this year, not 1,600
2) I don't have to fucking cloverleaf any of them

I also volunteered to work on Thanksgiving, which, if I understand correctly, will basically amount to me showing up and making sure we're not out of anything, and then I can leave—with any extra pies and/or dinner rolls we haven't sold by then! My family's having dinner at six, so I said that I'd be good to work as long as I could be out by five, and this definitely has me covered.

Accidentally mixed up some naan dough today with twice the water required; decided to double down on my mistake and double up the recipe.

I don't usually care for making naan at work, mostly because it involves even more rolling out of dough than you'd think. What with one thing and another (the one thing being the batch size and the other being tag teaming with one of my coworkers on the dirty dishes), this batch ended up sitting a lot longer than usual, which made for much easier rolling as a result. So the longer resting period I think I may keep going forward.

The batch size in general? Not so sure about. The first pieces of naan I'd rolled out had easily doubled in thickness, if not more than, by the time I finished rolling all of the dough and was ready to grill it. It was suuuuper over-proofed. I don't think it had a particularly negative effect on the overall product, but given the choice, I think I'd probably prefer to do two regular sized batches of naan rather than a single double sized batch in the future.

On the plus side, even if we do rule a few of the naan pieces to be unfit to serve, I made 113 total, so we should still have plenty; possibly even enough to get us through Thanksgiving (touch wood)...

...though the head chef for the restaurant has also been talking about shaking up the menu, which may mean naan will get eliminated from it in favor of some other flatbread. If this ends up being the case, I'm calling dibs on at least two dozen pieces! I feel fully entitled after the work I put in on them today. (Er, yesterday. Dratted past-midnight blogging...)

How I know I have time management issues: I decided to make a double batch of scotcharoos today between making a double batch of beer bread and a double batch of chocolate-and-peanut-butter-chip scones.

How I know I've learned from past time management mistakes: I at least started trying to melt the butterscotch mini-chips when the beer bread dough was in its first proofing stage, rather than after I had measured out all of the other scotcharoo ingredients. It didn't save me from getting out of work late, but it was a better result than it might have been.


Note to self: Find out of there's faster melting butterscotch chips on the market; two hours on a double boiler may not have been long enough for these fuckers, but it was more than long enough for me!

I'm sincerely hoping that we can use the time until the restaurant opens back up to stock up a lot of things we generally need for the bakery, and also that I can use my day off tomorrow to finally get that job application properly filled out and sent. (I'm also hoping that Favorite Boss will let me leave a few hours early sometime this week, since I was apparently the only food worker who didn't get to do that today.) I don't care how many "We really appreciate how long you've stuck this out with us!" emails I get, I need a job where I can breathe. (Literally, actually, but that's a post for another time.)

The (newly promoted) Executive Chef at work wants to talk about the size of our marble rye rolls again.

I am very tired of hearing, every single time we/I make a thing, that there is something wrong with it. Last time it was biscuits; this time it's the marble rye. And honestly, I only say "we" because of the time that I suspect kicked off the marble rye thing, which is the first time in ages I didn't shape it personally and gave the wrong advice to my coworker as to what size to roll them, following which we had complaints about the size of the rolls.

Last weekend, I talked to my coworker, and we pulled all the marble rye rolls we had in stock for the Big Cooking Boss to look over, and approve or disapprove of their use. He approved the most recent batch of rolls, and declared the batch before it usable. I thanked him for his time, and told him we'd be using the just-barely-too-small batch up before getting to the good batch, because it was older and he'd approved them for use.

Today I was informed that he wants to observe and possibly demonstrate rolling technique tomorrow when I set down to shaping the marble rye rolls.

God dammit, I thought we were done with this shit! Is this a communication problem? Because I'm trying to ask you what you expect from these rolls, and I thought you said they were good, but now it seems like you don't think so after all? Do you just want us to go to the way they were before I gave my coworker bad advice? Because we can do that! You just have to fucking say so!


In other news, I talked to a friend on Tuesday about jobs available at his company. He told me there were 95 open positions, and helped me narrow the list down to a handful I would be qualified for. I've since narrowed the handful down farther to jobs I think I would be interested in/feel capable of, and hope to start the actual applying process in the next couple of days. I've let at least a few of my compatriots at the hotel know of my intentions, and Teacher Coworker commented that she's not terribly surprised; the food industry is very rough on people.* I made it around eight years, which I feel is a pretty respectable amount of time, but I don't think I can keep it up. I'll be there with bells on for any efforts to improve the food industry, though.

* Yes, my first thought was the "chews them up and spits them out" idiom, I'm sure you're not surprised.

Left work at a much, much more reasonable hour today than I have... the rest of the week, honestly. Only twenty minutes after I was scheduled off, and even that I might have skipped with a few different choices.

I managed to finish all of my assigned tasks today, as well as a task that had originally been on my list for tomorrow, and sweep and mop the majority of our workspace. (Why am I sweeping and mopping the bakery space? Because the cleaners who the hotel had originally hired all left the job, and the cleaners they contracted to do it showed up all of maybe twice, shortly after being contracted, and we in the bakery haven't seen any evidence of them since.) My other options included leaving maybe half an hour early, doing a few other menial tasks and whittling away the time until Leaving O'clock, or helping out in the dish room.

I honestly would have liked to help out in the dish room, but my decision came down to this: There were other people who were willing and able to wash dishes, but not who were willing and able to clean the bakery floor. And it needed cleaning badly. Probably for more than a week now, but we've been so slammed by things that we need to do, neither me nor my two baker coworkers have had the time or energy to do more than a quick sweeping job for ages. So today I took initiative and did the most thorough sweeping I could manage, and at least a decent mopping job (I hope). Mopping took a lot out of me (it's physical in a very different way from baking), but ultimately I think I'm glad I did it.

Anyway, other than that, I'm still recovering from the 11:20 shift yesterday, and it's highly likely that I'll turn the lights out early today. And also sleep through most of Saturday and Sunday, since those are my next days off. We'll see what tomorrow brings...

That was an 11 hour 20 min shift! I, as a part time worker by choice, could conceivably get overtime pay this week! This is not okay! I am in remarkably good spirits for how not okay that was!

Boy howdy has it been a long day week month? Ish? Bleh.

Days at work were pretty long in the week-and-change leading up to AnimeIowa, so I was disappointed when I started up again after my "working vacation" and my days were really no shorter. It's been a grueling couple of weeks, with my favorite boss leaving soon and really just me and one coworker in the bakery most of the time. And I truly do like and appreciate this coworker most of the time, but she is... even less organized than I am? And hasn't found a method of organization that works for her yet? And also easily stressed out in a way that really stresses me out? So when she had to leave early today for a dentist's appointment, I ended up having a better work day than I usually do, even though I could have really used an extra pair of hands around the bakery for most of it.

I left "early" yesterday, in a way that mostly translates to "actually on time", because I had an oil change scheduled for this morning that I had to get up early for, which lengthened the day another few hours. Staying two hours late at work today didn't help much, even if it was a less stressful environment than it could have been (and also I got a lot of podcast listening done). I technically have tomorrow off, but I'm going in for a few hours anyway, mostly because we have fifty-eight six inch cakes that need finishing and boxing by Sunday afternoon and only half of them are even crumb coated yet (and I don't know if we even have enough frosting for all of them just now), but also because the aforementioned cake situation plus several large banquets in the past and upcoming weeks have badly depleted our time for backing up the essentials. Plus there was one day when I was instructed to make marble rye rolls when, judging by what's actually backed up in the freezer, I really should have been making hamburger buns.

Anyway, it's been. Something. At work. To the point where I'm once again considering the pros and cons of finding another job. I went into baking because it was something practical to do and straightforward to learn, and also has an element of visual creativity I can lean into, but I haven't really been able to take advantage of the "visual creativity" part for several years now, and the rest of the job is definitely getting to me. Especially the stuff that really shouldn't be part of our job. Like, we've got an actual dish washing room for the whole hotel? But the bakery staff still washes most of our own dishes, because otherwise we have to hunt them down in other kitchens on the regular (or, in the case with industry standard recycled sour cream containers, they get thrown out by one of the dish washers). And the cleaning crew the hotel hired to supposedly come in and wash our floors and maybe wipe off our appliances doesn't seem to have done any work in the bakery at all but for once or twice after they were hired.

So yeah. I'm tired and frustrated, but at least I'm going to sleep soon, and that will be something.

Whoever decided that marble with vanilla-chocolate swirled icing was a good idea for 700 individually packaged cupcakes to be made in under two weeks by a team of one part time worker, one full time worker, and one full time worker who spends a third of their time in another department, who also need to fulfill other orders in addition to keeping their standard menu items stocked, needs to go back and re-think some things.

And/or come help us out in the bakery personally. I'll take either. (Preferably both.)

On the one hand, it's a nice, dark Saturday night right before July 4th in the United States; the distant rumbling I'm hearing is almost certainly fireworks rather than thunder.

On the other hand, I feel better for having gone out to my car and closed the windows I'd left cracked in anticipation of heat but not rain.


In other news, the AC is fixed again as of yesterday morning. I'm keeping water bottles in the freezer for a few more days at least, though, Just In Case.


In other other news, I'll be working extra hours the next week; one of my coworkers is taking her PTO before it expires, and has picked this week to do so. More power to her, and this'll give me some more spending money for AI, but uh. Still not terribly looking forward to the next week.
